Eataly, the world’s largest high quality food and wine market, is proud to have created the menu for the Maserati team. Under the supervision of Ugo Alciati, Michelin starred chef of Guido di Pollenzo (Cn), the best Italian ingredients were selected with the goal of providing a complete diet for the sailors.  The biggest challenge was to keep the weight of the food that would be stored in the galley as low as possible.  As such, Italy’s best products, like artisanal pasta from Afeltra di Gragnano and meat from La Granda, have been subjected to intense dehydration in order to drastically reduce their weight, while not affecting their priced organoleptic qualities.
